It’s a fermented food so it’s great for gut health, and it’s made from just 3 simple ingredients (soybeans, water, and rice- no fillers or preservatives). Serves 5 ✅Ingredients: 2 (8-ounce) packets Lightlife Original Tempeh, crumbled 1 ¼ cup dry quinoa 1 vegetable bouillon cube 2 tablespoons water 2 tablespoons tamari or soy sauce (preferably reduced sodium) 2 tablespoons nutritional yeast 1 tablespoon neutral cooking oil, plus more as needed 1 teaspoon garlic powder, plus more as needed 1 teaspoon smoked paprika ½ teaspoon onion powder 1 ½ teaspoons maple syrup 1 large red bell pepper, large dice 1 large green bell pepper, large dice 1 large yellow onion, large dice Salt to taste 2 ½ cups shelled edamame 1/2 cup plus 2 tablespoons kimchi ✅For the chipotle sauce: 1 (5.3-ounce) carton plain cashew yogurt 2 chipotle peppers in adobo sauce 1 teaspoon adobo sauce Juice of 1 medium lime 1 garlic clove 1 teaspoon maple syrup (optional) ✅Cook the quinoa. ✅Preheat oven to 425ºF. ✅Dissolve vegetable bouillon cube in the water, and tamari in a medium bowl. Add the nutritional yeast, oil, garlic powder, smoked paprika, onion powder, and maple syrup. Mix. Toss tempeh crumbles in the marinade until the they are evenly coated.
